Aioli

Aioli is an emulsion of olive oil, garlic, and sometimes lemon juice. It is a traditional sauce from the Provence region of southeastern France. The word aioli comes from the Provençal word aiòli, meaning garlic and oil.

Aioli is made by whisking or blending garlic and olive oil together until the mixture emulsifies. The emulsion is then stabilised with an acid, such as lemon juice. Sometimes egg yolks are used as an emulsifier.

Aioli is traditionally served as a dipping sauce for boiled vegetables, fish, or meats. It is also used as a spread on sandwiches.

Advice

When making aioli, start by whisking together the egg yolk and lemon juice in a medium-sized bowl until they are combined. Then, add the garlic and salt to the mixture and whisk until combined. Next, begin to slowly pour the oil into the mixture while whisking continuously to ensure that the aioli mixture is emulsified. Once all of the oil has been added, the aioli should be thick and creamy. If a thinner consistency is desired, a tablespoon of water can be added. Finally, season the aioli to taste with additional salt, pepper, and lemon juice. Enjoy!
