Biscotti
Biscotti recipes have been around for centuries, with the earliest known recipes dating back to the 13th century. The word “biscotti” comes from the Latin word “bis coctus,” which means “twice-baked.” This refers to the traditional method of baking the biscuits twice, which gives them their characteristic hard texture.
The original biscotti recipes were quite simple, containing just a few ingredients like flour, water, salt, and anise seeds. Over time, bakers began to experiment with different ingredients, adding things like honey, nuts, and fruits. Today, there are endless variations of biscotti, with something to suit every taste.
Despite their long history, biscotti only became popular in the United States in the last few decades. In the 1980s, an Italian baker named Domenico Ghirardelli began selling his biscotti in San Francisco. Ghirardelli’s biscotti quickly became a hit, and other bakeries began to produce their own versions.
Advice

Start by combining the dry ingredients in a bowl, then adding the wet ingredients and mixing until combined. Make sure to not overmix the dough or your biscotti will be tough. When shaping the dough, make sure to press down firmly to ensure the biscotti hold their shape during baking. Be sure to not overbake the biscotti or they will be too hard. After baking, allow the biscotti to cool before slicing and baking a second time. Finally, when storing the biscotti, make sure to keep them in an airtight container to keep them fresh.
