Bouillabaisse

Bouillabaisse is a traditional Provençal fish stew originating from the city of Marseille. The dish is typically made with a variety of fish and seafood, including rascasse, monkfish, mullet, and shellfish, that are cooked in a broth of garlic, onions, tomatoes, saffron, and fennel. The stew is typically served with a bread or rice, and may also be garnished with aïoli.

Bouillabaisse is thought to have originated in the 18th century, when Marseille was a major maritime trading center.
