Bourguignon

Bourguignon is a type of stew that is typically made with beef, although variations with other meats such as pork or lamb are not uncommon. The dish is named for the Burgundy region of France, where it is believed to have originated. There are many theories about the origins of bourguignon, but the most likely explanation is that it was created by peasant cooks who needed to make use of the less-desirable cuts of meat.
