Brie
Brie is a soft, white cheese with a creamy texture and a mild, slightly tangy flavor. It is made from cow's milk and originates from the Brie region of France. Brie has been made since the 8th century and was originally known as the "queen of cheeses."
Brie was mentioned in a French cookbook as early as 1470, and it is thought to have been served at the wedding feast of Charles the Bold and Margaret of York in 1468. The cheese was also mentioned in the play "Cymbeline" by Shakespeare.
Brie recipes began to appear in American cookbooks in the 19th century. The first known recipe was published in 1824 in "The Virginia Housewife" by Mary Randolph. The recipe called for the cheese to be wrapped in pastry and baked.
