Brûlée
A crème brûlée recipe was first published in a French cookbook in 1691. The recipe called for the cream to be boiled with a burnt piece of sugar. This was likely the first time the term “brûlée” was used in reference to a dessert.
The recipe remained relatively unchanged for centuries, until it was popularized in the United States in the 1980s. At this time, chef’s began experimenting with different flavorings and toppings for the classic dessert.
Today, crème brûlée is enjoyed around the world and there are endless variations of the dish. From chocolate to lavender, there’s a flavor to suit everyone’s taste. The one thing that remains constant is the rich, creamy custard and the crisp, caramelized sugar topping.
