Chicken enchilada
A chicken enchilada is a Tex-Mex dish that consists of a corn tortilla filled with shredded chicken and topped with a chili pepper sauce. Enchiladas originated in Mexico, where they were traditionally made with a variety of different fillings, including meat, cheese, and vegetables.
The first recorded recipe for enchiladas appeared in a Mexican cookbook from the early 19th century. This early recipe, however, did not include chicken as a filling. It wasn’t until the early 20th century that chicken began to be used as a common filling for enchiladas.
The popularity of chicken enchiladas in the United States began to grow in the mid-20th century, thanks in part to the increasing popularity of Mexican food in general. Chicken enchiladas can now be found on the menus of Mexican restaurants across the country.
