Confit
Confit recipes have been around for centuries and are a staple in many French homes. The word “confit” comes from the Latin word “conficere” which means “to prepare”. A confit is typically made with duck or goose and is a slow-cooked dish that is preserved in its own fat.
The history of confit recipes can be traced back to the Middle Ages when soldiers would preserve meat in fat to keep it from spoiling. This method of preservation was also used by peasants who could not afford to keep their meat fresh. The meat would be cooked in a large pot with fat and spices, then sealed and stored in a cool, dark place.
In the 18th century, confit recipes became more refined and were often used as a way to impress guests. A popular dish at the time was “pigeon en confit”, which is a whole pigeon that has been cooked in its own fat.
