Crostata
A crostata is a type of Italian tart or pie, typically made with a shortbread or pastry dough crust and a jam filling. The word crostata comes from the Italian verb crostatare, meaning "to crust." Crostata can be sweet or savory, and the dough can be made with various types of flour, including whole wheat, rye, or buckwheat.
The earliest known recipe for crostata dates back to the 16th century, when it was mentioned in Bartolomeo Scappi's 1570 cookbook Opera dell'arte del cucinare. In the 18th century, Antonio Latini's La Scienza in cucina e l'arte di mangiar bene included a recipe for a sweet crostata made with ricotta cheese and candied fruit.
Crostata became a popular dessert in the 19th century, when Naples was a leading center of pastry-making. In the 20th century, crostata recipes began appearing in American cookbooks, including the iconic Betty Crocker's Picture Cook Book, first published in 1950.
