Cupcake

A cupcake is a small cake designed to serve one person, which is often baked in a small, thin paper or aluminum cup. As the name suggests, it is supposed to be eaten out of a cup, not sliced like a Cake. Cupcakes are often served with a decorative frosting on top, although they may be left plain.

The first cupcake recipes appeared in the early 19th century. One of the earliest was written by Amelia Simmons in her 1796 cookbook, American Cookery. Simmons’s recipe called for a pound of butter, a pound of sugar, a pound of flour, and a dozen eggs. This rich cake was leavened with pearlash, a form of baking soda.

Other early cupcake recipes were more like what we would call cake today. These recipes generally used less butter and sugar and were leavened with eggs. One of the most popular early cupcake recipes was published in an 1828 cookbook called The Virginia Housewife. This recipe called for a pound of flour, a pound of sugar, a pound of butter, and 12 eggs. It also called for “essence of lemon” and “rosewater” to be added to the batter.
