Curd

Curd recipes are thought to date back to ancient times, when milk was first being cultured and used to make cheese. The first recorded recipe for curd cheese comes from Pliny the Elder’s Natural History, written in the 1st century AD. This early recipe called for milk to be “curdled” with rennet, an enzyme derived from the stomachs of young calves.

Curd cheese was a popular food in the medieval period, and there are many recipes for it in medieval cookbooks. These recipes usually call for the curd to be flavored with spices, herbs, or fruit. Curd cheese was also a common ingredient in pies and puddings.

In the 18th century, curd cheese became known as “cottage cheese” due to its popularity among rural peasants in England. Cottage cheese was typically made with sour milk, as this was the easiest way to curdle it. The cheese was then drained and squeezed to remove any excess liquid.
