Fish fillet

The humble fish fillet has been a staple of home cooks and professional chefs alike for centuries. Its popularity is due in part to its versatility; fish fillets can be baked, grilled, fried, or poached, and can be used in a wide variety of dishes.

The earliest known fish fillet recipe dates back to the 1st century AD, when Roman chef Marcus Gavius Apicius included a recipe for fried fish fillets in his cookbook De Re Coquinaria. In the centuries that followed, fish fillets became a popular dish in Europe, often being served with sauces or herbs.

In the 19th century, fish fillets began appearing in American cookbooks, as the popularity of seafood increased in the United States. One of the first American cookbooks to include a recipe for fish fillets was The Boston Cooking-School Cook Book, published in 1896. This cookbook contained a recipe for baked fish fillets that was very similar to the Roman recipe included in Apicius’s cookbook.
