Fusilli

Fusilli recipes have a long and storied history. One of the earliest known recipes comes from a 14th century cookbook called the Liber de Coquina, which includes a recipe for a dish called fuselli in crepis. This dish is made with a type of pasta that is rolled into a spiral shape and then cooked in a crepe.

Fusilli recipes were likely brought to Italy from the Middle East, where a similar type of pasta, called couscous, was popular. It is thought that fusilli were first made in the southern Italian region of Campania. The word fusilli is derived from the Italian word for spindle, which is used to describe the shape of the pasta.

Fusilli recipes became popular in the United States in the early 20th century, when Italian immigrants began to settle in large numbers in cities like New York and Boston. Fusilli became a staple of Italian-American cuisine, and can now be found in dishes all over the country.
