Granita

Granita is a frozen dessert made from sugar, water and various flavorings. It is thought to have originated in Sicily, where it is still a popular summer treat. The word granita comes from the Italian word for "grain", referring to the coarse, grainy texture of the finished product.

Granita recipes can be traced back to the 16th century, when they were first mentioned in a Sicilian cookbook. The book, titled Lo Scalco alla Moderna ("The Modern Steward"), contained a recipe for a "sorbetto di mandorla", or almond sorbet. This early granita recipe was made by boiling sugar and water together, then adding ground almonds and freezing the mixture.

Over the centuries, granita recipes have evolved to include a wide variety of flavors. Common flavorings include coffee, chocolate, lemon, orange, strawberry and pistachio. In Sicily, it is not uncommon to find granita flavored with savory ingredients such as tomatoes, onions and herbs.
