Meat loaf
A meatloaf is a dish of ground meat mixed with other ingredients and formed into a loaf shape, then baked or smoked. The loaf shape is formed by either cooking it in a loaf pan, or forming it by hand on a flat surface. It is usually made with ground beef, although ground lamb, pork, veal, venison, poultry, and seafood are also used, sometimes in combination. Meatloaves are often flavored with onions, garlic, Worcestershire sauce, ketchup, mustard, and breadcrumbs.
The earliest recorded recipe for meatloaf comes from the Roman cookbook Apicius, which dates back to the 4th or 5th century AD. The recipe, called "Isicia Omentata", includes ground pork, pine nuts, and white wine.
Meatloaf has been a popular dish in the United States since the early 19th century. The first known recipe for "American meatloaf" was published in 1832 by Eliza Leslie in her cookbook Seventy-Five Receipts for Pastry, Cakes, and Sweetmeats. This recipe called for beef, suet, bread crumbs, and milk.
