Orzo

Orzo recipes have been around for centuries and are believed to have originated in Greece. The dish is made with a type of rice called orzo, which is a short-grain rice. The rice is boiled in water or broth and then typically flavored with herbs and spices. Orzo can be served as a side dish or as a main course. It is often used in soups and stews, and is also a popular ingredient in Italian and Greek salads.

Orzo recipes are believed to date back to the Byzantine era. The dish was mentioned in the 11th century Byzantine cookbook, the Kitab al-Tabikh. The book contains a recipe for a dish called skortharia, which is made with orzo, lamb, and spices.

In the 13th century, the Italian writer Dante included a recipe for orzo in his Inferno. The dish was also mentioned in a 14th century cookbook from Sicily. Orzo recipes began to spread throughout Europe in the 16th century.
