Paillard

A paillard is a thin cut of meat that is pounded thin and usually grilled or pan-fried. The term is French in origin, and comes from the verb paillarer, meaning "to pierce with a fork."

The dish is said to have been created in the early 19th century by Jean-Louis Françoise Colline, the maître d'hôtel at the Hôtel de la Paillarde in Paris. The hotel was located in the Rue Saint-Honoré, near the Palais-Royal.

The story goes that Colline was serving a dish of roasted chicken to a group of hungry guests, when one of them complained that the chicken was too tough. Colline is said to have grabbed a carving knife and quickly pounded the chicken breast until it was thin enough to cut with a fork. He then pan-fried the chicken and served it with a simple pan sauce.
