Parfait
A parfait is a French dessert that typically consists of layers of fruit, whipped cream, and cake or ice cream. The word parfait can also refer to a savory dish, but this article will focus on the sweet dessert.
The first parfait recipes appeared in the 18th century. The earliest known recipe was published in 1768 by French chef Nicolas Appert. His recipe consisted of layers of cream, jelly, and fruit. Appert’s recipe was likely inspired by similar desserts that were popular in Italy at the time.
Parfaits became increasingly popular in the 19th century. They were often served at grand dinner parties and balls. cookbooks from this era contain many different variations of the dessert, including ones made with chocolate, coffee, and liqueur-flavored cream.
