Parmesan

Parmesan is a hard, dry cheese that is made from skimmed or partially skimmed cow’s milk. It has a natural yellowish-white color and a crumbly texture. Parmesan is a versatile cheese that can be used in a variety of recipes, such as in grating over pasta dishes or in shaving over salads.

Parmesan has been made in Italy since the Middle Ages. The first recorded mention of Parmesan cheese dates back to the year 962, in a document from the Monastery of Saint Gall. The cheese was originally produced in the regions of Parma and Reggio Emilia, in the north of Italy. Parmesan cheese is still made in these regions today.

The traditional way of making Parmesan cheese involves using a special type of starter culture, which is made from the whey of previous batches of Parmesan cheese. The whey is mixed with milk and left to ferment for 12-24 hours. After fermentation, the mixture is heated and the curds are separated from the whey using a Cheesecloth.
