In 1929, the Martin brothers owned a restaurant called Martin's Restaurant and Bar on St. Louis Street in New Orleans. They served a sandwich called the "poor boy" or "po'boy" to customers who came in looking for a cheap meal. The sandwich was made with whatever meat was leftover from the day's dinner, and it was served on French bread.
Another theory suggests that the Po'Boy was created by New Orleans street car workers during a strike in the early 1900s. The workers went on strike to protest the working conditions and low wages.
