Poke
In Hawaii, poke (/ˈpoʊkeɪ/ PO-kay) is a dish consisting of diced raw fish that is marinated in various sauces and seasonings. It is often served as an appetizer or main course. Traditional Hawaiian poke recipes call for fish that has been caught using spears or nets. The fish is then gutted and skinned before being cut into small cubes. Poke seasonings can include sea salt, limu (seaweed), inamona (crushed roasted candlenut), sesame oil, and shoyu (soy sauce).
Poke has been a staple in Hawaiian cuisine for centuries, with early references to the dish appearing in Hawaiian language newspapers from the 1800s. The word "poke" itself is of Polynesian origin, and refers to the act of slicing or cutting. Over time, poke recipes have evolved to include a variety of different fish, as well as tofu and other plant-based proteins.
