Potato gnocchi

Gnocchi, a type of Italian dumpling, are traditionally made with potatoes. In fact, the word gnocchi is derived from the Italian word nocchio, meaning a knot in wood. The first known recipe for potato gnocchi appeared in a cookbook from Florence in the 16th century. The book, titled Opera dell'arte del cucinare, was written by Bartolomeo Scappi and included a recipe for gnocchi made with boiled potatoes, wheat flour, eggs, and Parmesan cheese.

Potato gnocchi became a staple in Italian cuisine in the 18th century. At that time, potatoes were introduced to Europe from the Americas and quickly became a popular food. They were a cheap and filling food, which made them especially popular with the lower classes.
