Quesadilla

A quesadilla is a type of Mexican pancake or fritter made with a wheat flour tortilla and stuffed with a variety of fillings, including meat, vegetables, cheese, and beans. The word quesadilla is derived from the Spanish word for cheese, queso. Quesadillas are popular in Mexico and the southwestern United States.

The earliest known recipe for a quesadilla-style dish comes from a 16th-century Mexican cookbook. The recipe, called tortilla de queso, consisted of a wheat flour tortilla filled with cheese and fried in oil.

Over the centuries, the quesadilla has evolved into a variety of different forms. Today, there are many different types of quesadillas, including those made with corn tortillas, whole wheat tortillas, and even gluten-free tortillas. The fillings have also become more diverse, with options such as chicken, shrimp, vegetables, and even chocolate.
