Ragù

Ragù is an Italian sauce made from meat, vegetables and tomato sauce. It is a traditional sauce in Italian cuisine and is often served with pasta.

The history of ragù recipes can be traced back to the 18th century. The first known recipe for ragù was published in 1748 by Vincenzo Corrado in his cookbook "La Scienza in Cucina e l'Arte di Mangiare Bene". The recipe was for a sauce made with beef, pork, veal, chicken and goose. This ragù was different from the ragù we know today, as it did not contain tomato sauce.

The addition of tomato sauce to ragù is thought to have originated in the 19th century. The first known recipe for ragù with tomato sauce was published in 1891 by Pellegrino Artusi in his cookbook "Science in the Kitchen and the Art of Eating Well". Artusi's recipe was for a sauce made with beef, pork, lamb, chicken, veal, goose, rabbit, veal shanks, mutton, onions, carrots, celery, garlic, white wine, red wine, tomato paste, salt, pepper
