Seared salmon
Salmon has been a part of the human diet for thousands of years. The earliest evidence of salmon consumption comes from a cave in present-day Russia, where archaeologists found a salmon bone dating back to the Mesolithic period (8,000-5,000 BC).
The first known recipe for salmon comes from the Roman cookbook Apicius, which includes a recipe for salmon cooked in wine and vinegar. This recipe is thought to be from the 1st or 2nd century AD.
In the Middle Ages, salmon was often smoked or dried as a way to preserve it. This is how the popular Scottish dish, kippered salmon, was created.
Advice
When making seared salmon, it's best to start with the freshest ingredients possible. Look for wild-caught salmon with firm flesh, bright eyes, and a pleasant smell. Choose a good-quality cooking oil such as olive oil, avocado oil, or grapeseed oil, as these will give the salmon a nice flavor and texture. Heat the oil in a skillet over medium-high heat until it is shimmering. Season the salmon with salt and pepper, and then carefully place it in the skillet. Sear the salmon for a few minutes on each side until it is cooked through and lightly browned. Serve the salmon with your favorite accompaniments, such as a salad or grilled vegetables.
