Soufflé

A soufflé is a light, airy pastry made with egg yolks, whites, and flavorings. The word soufflé comes from the French verb souffler, meaning "to blow."

Soufflés have been around since the 18th century, but the first recorded recipe was not published until 1837. It was created by Antonin Carême, a French chef who is considered to be the father of modern French cuisine.

The original soufflé was made with a sweetened cream and flavored with orange flower water. Carême's recipe was later adapted by Auguste Escoffier, who added cheese and egg yolks to the mixture.
