The first written record of spices comes from an ancient Egyptian papyrus dating back to 1600 BCE. This document listed more than 700 medicinal plants, including cardamom, coriander, fennel, and juniper.

The use of spices spread from the Middle East to Europe, and by the Middle Ages, they were an important part of European cuisine. Spices were used to add flavor to food, as well as to preserve it.
