Tortilla
A tortilla is a thin, unleavened flatbread, made from finely ground maize (corn) dough, traditionally cooked on a griddle. It is a staple food in many Latin American cuisines, where it is eaten as a side dish or used as a base for other dishes.
The earliest evidence of tortillas being used in the Americas dates back to 10,000 BC, when they were used as a form of currency by the Olmec people of present-day Mexico. By the 6th century BC, the Maya were making them from a mixture of maize and wild grasses, and by the 1st century AD, the Aztecs were using a process similar to modern-day nixtamalization to make their tortillas.
Tortillas were introduced to the rest of the world by Spanish conquistadors, who observed the Aztecs eating them. The first recorded mention of a tortilla in Spain is in a 1520 work by Gonzalo Fernández de Oviedo y Valdés, and the first recipe for them appears in a 1529 book by Juan de Alcalá.
