Cacciatore
Cacciatore recipes are thought to have originated in Italy, although the dish has been adopted by many cultures around the world. The word cacciatore means "hunter" in Italian, and the dish is typically made with chicken or other game that has been hunted.
The first recorded cacciatore recipe was published in the 16th century cookbook, Libro de Arte Coquinaria, by Bartolomeo Scappi. The recipe called for chicken, partridge, or pigeon to be cooked in a sauce made from wine, vinegar, salt, and spices.
While the dish has undergone many changes over the centuries, the basic ingredients and cooking method remain the same. Chicken or other poultry is cooked in a sauce made from tomatoes, onions, garlic, herbs, and wine.
