Duck

Duck recipes have been around for centuries, with the earliest known reference dating back to the 1st century AD. The Roman cookbook Apicius includes a recipe for roast duck with honey and spices.

Duck continued to be popular in Europe throughout the Middle Ages. In England, the dish was often served at banquets and celebrations. A 14th century cookbook includes a recipe for a spit-roasted duck with a garlic and herb stuffing.

By the 17th century, duck was being cooked in a variety of ways. In France, ducks were often roasted with garlic and served with a sauce made from the bird's blood. In Germany, duck was often braised with cabbage and dumplings.
