Marsala
Marsala is a fortified wine from Sicily that has been around since the 18th century. It is made from red grapes and fortified with brandy. Marsala can be dry or sweet, and is used in cooking to add flavor to dishes.
The first recorded recipe for Marsala was in 1773, when Antonio Vivani wrote about it in his book "The Art of Cookery, Made Plain and Easy". Vivani's recipe called for the wine to be heated with sugar and spices, and then served with roast chicken or veal.
Marsala became popular in England in the early 19th century, when it was used to make "Mulled Marsala", a spiced wine drink. Marsala was also used in recipes for cakes, pies, and puddings.
