Rillette

Rillette recipes are believed to date back to the 18th century, when they were created in the French city of Tours. The dish was originally made with pork, but over time, other meats such as chicken and fish have been used. Rillettes are typically made by slow-cooking the meat in fat, then shredding it and mixing it with spices. The mixture is then spread onto a piece of bread or toast and served.

Rillettes became popular in the United States in the early 20th century, when French immigrants brought the dish with them. Today, rillettes can be found in many American restaurants, typically served as an appetizer. While the dish is still most commonly made with pork, chicken and fish rillettes are also common.
