Udon

Udon is a type of Japanese noodle that is made from wheat flour. The history of udon can be traced back to the 7th century when it was first mentioned in a Japanese document. Udon was originally made by hand, but the production process was later mechanized in the 18th century.

Udon noodles were originally eaten with a soup made from soy sauce and fish broth. This dish is known as udon suimono. The first udon noodles were made without any added seasonings or toppings.

The first udon noodles were made in the province of Yamato, which is now known as the Nara Prefecture. The first udon factory was established in the city of Osaka in the year 1867.
